As someone who makes hot sauce, I would test the pH of this and if above about 4, I'd fill a smaller bottle with the amount you'll use in a few weeks and freeze the rest.

Easy to drop the pH with vinegar, but I prefer lime juice or even those crystalized "Real Lime" packets Ben's used to post.
Huy Fong actually got sued by the city on behalf of people that live nearby their California plant. Apparently, the hot smell was so strong in the air people couldn’t breathe! Hehehe - I love Huy Fong 😂
