Where I live here in California, we have "spare the air" days, when you're not supposed to burn wood in a fireplace. Of course, I can't use my hob then.
These are excellent pans from a very high quality manufacturer. You usually see them described as "carbon steel" pans. They are lighter and thinner than cast iron, and don't have the fantastic heat retention that you get with that mass, but they otherwise perform in a similar manner. I like them as all purpose pans that can brown well and be very nonstick when treated correctly.
