These show as in-stock, but when I try to place one in the cart, the cart icon changes to display "UNDEFINED ITEMS". When you check the cart there is nothing in it.

This printer at this price point is a regularly offered
Staples
scam where they sell a certain quantity (it could be one or two, for all I know) at this price, but instead of changing the promotion or showing the items as "out of stock" on the website, they pretend they are still available, right up until the instant you try to order one. That way they get to advertise a color laster printer for a whole week for $75, even though they sold out the first hour.

Anyone actually score one of these at the sale price?

Yep, I snagged one when they were on sale before Christmas. They were in stock, then went out of stock for a couple of days then went back into stock for 2 or 3 days. I got mine during the second cycle of being in stock. Even got to use a $5 off of a $30 or more purchase coupon that they sent me in the mail.

It's actually an LED and not Laser... The Xerography process is still the same, but exposure is accomplished with an LED array rather than a scanning polygon laser system...It makes for a more compact printer and less manufacturing expense and complex mechanism.. I THINK OKI was the first to use this process.... What annoys me somewhat is they don't mention this at all.
I even spoke to someone from Staplez and Dddellll, they still try to convince you it's a "laser printer" with some circular logic jargon...... (Not that is makes any real difference in the real world......but.) "It's LED but it's laser, but it's LED..."

Correct, and that means one only needs to replace toner and no drums:

"Keep maintenance costs low: Save on upkeep with a single drum/fuser unit designed to last the life of the printer. All you have to replace are the toner cartridges."

No. a low end color laser is best for people who rarely print, has a higher cost per page once you start buying 4 carts for it. Get a monochrome laser with at least 4K page cartridge capacity.
