I've been using these for a while and have no issue around 500 degrees. They're invaluable for vegetables and fish on the grill, or anything flare up prone
I love mine. The gas grill stays around 550F and I've yet to burn them. What I don't like is cleaning them. Oils and fats seem to stay on it no matter how long you soak or clean them.
