The Classic is more balanced, in my own limited personal experience, compared to the better-looking Ikon. Having said that, the full bolster on the Classic only becomes an issue when it's time to sharpen the knife, especially when using stones. 'Best to go to a store and handle each knife first to see what feels most balanced, comfortable (with a proper grip), and matches your cutting style.
I like Wusthof knives a lot, but the Mac Superior 6.5" Santoku is my go to (currently $75) and does not have the bolster issue as a lot of good knives do. I do have a number of European and Far East blades but seem to use the Mac the most.
