If you don't pile up lots of food like a pig, can't you just invert a same sized plate and put on top?

Yes, a plate can be used, but only if you're warming something that doesn't need a bit of ventilation (to prevent pressure build-up for certain foods). This spatter has small holes for some ventilation. There are also spatter covers that have adjustable ventilation (option to close or open holes), which usually go between $5-$10.
