1) You may not want to lug around a 7" screen phone.
2) You or a passenger may wish to use the phone for something else while the GPS stays on the dash being a GPS.
3) Use your phone all day for everything and you may have to stop and charge it when that may not be convenient, or take along a power pack or cord, etc.
4) If you lose or damage your phone then suddenly you can do *nothing* instead of only losing features unique to it. A certain level of redundancy is a good thing.
