How do you set this up on Roku? They are not on the provider's list but do have an Epix App.

I have Epix through Charter, it has a lot of movies, but trying to sort through them is ridiculous... They need to get them categorized a lot better...

Yes, unlike Netflix, Epix is free for Charter Internet-only customers. Just search for "Charter Epix free" for instructions.
