"Entirely sealed off..."? Isn't it open at the top where the coffee is actually being brewed?

lol, this had to be the invention of some guy who plugged the hole in his water bong to make coffee after he couldn't find his regular coffee maker.

Vacuum coffee brewing is a process of long standing https://www.sweetmarias.com/store/brewing/coffee-brewers/vacuum-brewers.html
though it has been a boutique-y thing in the US since its heyday ended in the 60's. Bodum has been selling a vacuum system for the last ten years+, though their previous models completely electrified the process to simplify it per http://www.coffeecrew.com/gear-equipment-coffee/82-bodum-santos-3004-electric-vacuum-brewer.html . We had a couple different previous models of this basic design. This design was problematic for many, which presumably is why Bodum switched up to take the electricity out of it while retaining the basic process. Vacuum coffee is primarily for devotees, it's more time-consuming and worth the effort but not ideal as a daily driver, so to speak.

The last coffee tester I spoke to at the Exchange where commodity contracts are bought and sold said they use the pour-over method. I've been using the Melitta for decades and am satisfied that other than having no "automatic" features, it produces excellent coffee. I've never known of any electric coffee maker that costs less than ~ $200 that gets the water hot enuf (190-205F.) for good coffee.
